Breakfast Burritos

Ingredients

  • 6 large eggs
  • 3 Tbsp unsalted butter, cubed
  • Extra-virgin olive oil (EVOO), for the pan
  • 1/4 cup heavy cream
  • Sweet Cheeks Fuego Blend (to taste)
  • 6 slices bacon
  • 1/2 yellow onion, small dice
  • 2 Serrano peppers, small dice
  • Diced potatoes, fresh or frozen (about 1/2 bag frozen, or 2 to 3 russets if using fresh)
  • 4 slices Havarti cheese
  • Large flour tortillas
  • Your favorite hot sauce and sour cream, to serve

Cook the fillings

  1. Sprinkle Fuego seasoning over the bacon and cook it on the stovetop or in the oven. Amanda cooks hers in the oven at 350°F (177°C) until crispy, flipping every 10 minutes or so, usually 15 to 20 minutes.
  2. Whisk the eggs and heavy cream together in a bowl. Once combined, stir in the cubed butter and set aside.
  3. Heat a pan over medium-high heat and add a drizzle of EVOO. Add the potatoes and cook, stirring every few minutes.
  4. After about 10 minutes, add the onion and Serrano. Keep cooking until the vegetables are soft, about 5 more minutes. Turn off the heat and set aside.
  5. Wipe out the pan and add the egg mixture. Scramble until the eggs are cooked through.

Assemble & serve

  1. Lay two slices of Havarti on a tortilla. Top with crumbled bacon, scrambled eggs, and potatoes.
  2. Fold the burrito and set it seam-side down in a nonstick pan over medium heat. Toast until golden brown on both sides.
  3. Slice in half and serve with your favorite hot sauce and sour cream.
